Sun dried tomatoes in extra virgin olive oil
In the period between the second half of July and the first week of August, the freshly picked tomatoes in the early hours of the day are dried in the sun.After a second selection, the best tomatoes are washed and cut in half and then lying in the sun along grids suitably arranged exposed to the midday sun throughout the day. Then later switch to salting tomatoes which is the most delicate phase of the process.
The dried tomatoes are preserved for tanning, using manual procedures result of the local tradition.
